This chart, from My Best Smoker, covers the cook times and cooking temperatures of 17 of the most mouth-watering meats. You can learn to smoke brisket, salmon, chicken, turkey, ribs, and even hot wings. The outermost ring (light red) on the inside of each meat tells you what temperature to smoke at, then the yellow ring tells you for how long, and the brownish ring on the inside tells you the recommended internal temperature of the meat so you know when it’s done. The graphic is designed for use with electric smokers, but some of these suggestions may still work with charcoal or dry smokers.

This video, by Janet Califf, is of an amazing handcrafted steam engine train smoker built by “Illinois Slim”. “Illinois Slim” has been working on the project for three years and built it mostly from scratch. The smoker has a wood-stoked fire that generates steam, along with a working whistle, a bell and much more!

The engineer reveals that he named the train smoker “97″ after the country song “Wreck Of The Old 97” famously sung by Johnny Cash.

For three years, retired iron worker Steve has been working on a homemade steam BBQ smoker that looks like a steam train engine. The miniature train has a boiler and firebox to make the most delicious and tender BBQ chicken. But the best part is releasing steam from the cylinders, ringing the bell, and blowing the steam whistle. All aboard the train to delicious-ville.

Great to have the Duck Commander crew in Alaska! The Robertson family joined us this past weekend to honor wounded warriors flown up for a healing retreat at Franklin Graham’s camp in the wilderness; and we chowed down together on scrumptious moose BBQ in our back yard. It was a spectacular day with down-home friends and family! The patriarch Duck Commander and I had a great chat – unPHILtered by the media! (You know I love that!)
